Problems with the stock configuration

Hi guys I'm Emanuele Schirato

I have some problems with the configuration.
!)The label product in stock isn't visible in the frontend but i can set it in the admin.How to do it?
2)i try to explain.
for example:
i have 100 products in stock
i sell 20 items
now i have 80 items in stock.
now i cancel this order and delete the order.
this time i must have again 100 items in stock.
but when i delete a order, the items are not counted back.
