Extended sorting: change default category sorting to EAN?

Good morning,
i would like to change the default category sorting from "Name" to "EAN".

I need this because i want to order my product on an arbitrary way, putting first the ones that i want to put in evidence.
I cannot do this sorting by "Name" or by "Newest".

I bought the "Extended sorting" plugin because i thought i could do that with it.
Can i?

I don't want to show my users an option, i want to change che default category sorting to "EAN" in the backend.
